The cuisine of Aguascalientes combines spices and flavors from a wide variety of influences. Having historically been part of both Jalisco and Zacatecas, the local culinary scene grew out of the traditions of both states. Today, as Aguascalientes has become a destination for people from all over the world, it is easy to find food from Venezuela, Colombia, Haiti, Argentina, India, Pakistan, Japan, China, Germany, and many other places.
Enchiladas Aguascalientes
Typical Mexican snack from Aguascalientes, it contains ancho chile, onion, cinnamon, fresh cheese and cream.
Chile Aguascalientes
A variation of chile en nogada created at the end of the 20th century to delight the palates of the King and Queen of Spain during their visit to Mexico.
